I’ve been MIA recently because….drum roll…my husband and I have bought a house! More to come on that. But I wanted to share a quick recipe to get back into the swing of things. I threw this together today for my toddler, but then ended up eating it myself. I’ve been getting so many carrots and parsnips in my CSA box lately that I wanted to do something a little different with them.
Here’s what you need:
- 2 Large carrots, peeled and sliced into rings
- 2 Parsnips, peeled and sliced into rings
- Quinoa (1 cup uncooked)
- 1 avocado, cut into cubes
- 3/4 teaspoon Garlic Powder
- 1/4 cup white wine vinegar
- 1/4 cup of olive oil
- Salt and pepper to taste
Directions:
- Prepare the quinoa according to package instructions
- Steam the carrots and parsnips together until tender
- Combine the quinoa, carrots, parsnips, garlic powder, olive oil and vinegar
- Fold in the avocado, but do so gently so that it maintains the cubed shape
- Season with salt and pepper to taste
- Serves 4 side salads or 2 for lunch. As a side it would go great with a pork or chicken dish!
