I made this yesterday after the big storm, and a lot of people have asked for the recipe. It’s easy, hearty, and absolutely delicious.
I adapted it from the Apple of My Eye’s recipe for Sausage & White Bean Soup. Here’s my version:
Ingredients
- 2 shallots, diced
- 3 cloves of garlic, chopped
- 2 tablespoons of olive oil
- 3 links of turkey sausage, cut into slices
- 1 14oz can of diced tomatoes (San Marzano preferred, but not necessary)
- 5 cups of chicken stock
- 1 cup of water
- 1 cup of orzo
- 1 package of frozen chopped spinach
- Salt and pepper
- Grated Parmesan cheese (optional)
Directions
- Heat the olive oil over medium-high heat and add the shallots and garlic. Cook for about 3 minutes or until translucent
- Add the turkey sausage and cook until it starts to brown and is no longer visibly raw.
- Season with a dash of salt
- Add the chicken stock, water and tomatoes and bring to a boil
- Add the orzo and stir occasionally to keep it from sticking to the bottom, and add a ½ teaspoon each of salt and ground black pepper
- Reduce the heat to medium
- When the orzo is cooked through to a chewy consistency (about 8-9 minutes), add the spinach to the pot and break up as it heats up
- Adjust salt and pepper to taste
- Serve hot with a sprinkle of grated Parmesan on top (optional)
