Spinach Turkey Orzo Soup

I made this yesterday after the big storm, and a lot of people have asked for the recipe.  It’s easy, hearty, and absolutely delicious.

I adapted it from the Apple of My Eye’s recipe for Sausage & White Bean Soup.  Here’s my version:


  • 2 shallots, diced
  • 3 cloves of garlic, chopped
  • 2 tablespoons of olive oil
  • 3 links of turkey sausage, cut into slices
  • 1 14oz can of diced tomatoes (San Marzano preferred, but not necessary)
  • 5 cups of chicken stock
  • 1 cup of water
  • 1 cup of orzo
  • 1 package of frozen chopped spinach
  • Salt and pepper
  • Grated Parmesan cheese (optional)


  • Heat the olive oil over medium-high heat and add the shallots and garlic. Cook for about 3 minutes or until translucent
  • Add the turkey sausage and cook until it starts to brown and is no longer visibly raw.
  • Season with a dash of salt
  • Add the chicken stock, water and tomatoes and bring to a boil
  • Add the orzo and stir occasionally to keep it from sticking to the bottom, and add a ½ teaspoon each of salt and ground black pepper
  • Reduce the heat to medium
  • When the orzo is cooked through to a chewy consistency (about 8-9 minutes), add the spinach to the pot and break up as it heats up
  • Adjust salt and pepper to taste
  • Serve hot with a sprinkle of grated Parmesan on top (optional)
